I do buy it in the frozen section pre-packaged. They come in individually wrapped fillets.

You can bake or grill how ever you prefer. I simple take the Fillet out of the package and place in the pan- season both sides with my own homemade seasoning and fresh black pepper. I then squeeze fresh lemon or sprinkle a little lemon juice over the top of fillet.

Then bake at 375 degrees for 30 minutes turning the fillet once. Fish will crumble apart when it is done. Testing it with a fork to see if it is done by simply cutting it will work. Fish will be a nice brown color like picture above.

If you are grilling the fish you can use and indoor grill pan. I season it the same and then place it in pan- flipping it every 5 minutes until nice and brown and done.

They also sell Salmon the same way- another great fish to try!!! One of our favorites too!!

*5 Trips back to the kitchen.Molliehttp://www.blogger.com/profile/17404087999714569009noreply@blogger.com0tag:blogger.com,1999:blog-2038121747274603770.post-14508540758136718902011-02-08T14:58:00.001-06:002011-02-08T22:24:37.442-06:00Mashed Sweet PotatoeWe love some Sweet Potato in our house. Then place in pot- fill with water to top of potatoes. Place pot on High and allow to come to a rolling boil. Boil until potatoes are tender. {to check- stick a knife into potato and if it is tender or falls apart- it is done}
Drain water. Mash potatoes with potato masher or using electric beater. Add milk, butter, Cinnamon and sugar and mix again. Mix well and if needed add more to taste.
You can add marshmallows also to hot potatoes for a topping. Of course Sweet potatoes are much healthier than white- but adding extra sugar takes away from the healthy factor.

*5 trips back to the kitchenMolliehttp://www.blogger.com/profile/17404087999714569009noreply@blogger.com0tag:blogger.com,1999:blog-2038121747274603770.post-51009316467190960162010-12-15T12:56:00.004-06:002010-12-15T13:09:43.557-06:00Good Seasoned RoastLarge Beef Roast
season salt
black pepper
minced garlic
Worcester sauce
beef bouillon granules (spoon full or two)
1 package of onion soup mix
*optional* fresh pealed Potatoes and carrots

Pre- heat oven to 350*

Rub roast with season salt & pepper. I made T's first birthday cake homemade, with homemade butter cream icing & fondant. It took me 4 hours just to decorate it!! I made 3 cakes the few weeks prior to to TEST and see what it would be like. Glad I did- because the bakery would have gotten a 911 call from ME!! Not until about a year later did I notice I put all that time and effort into decorating the Cake & making it look just right.....that I miss spelled BIRTHDAY!!! I realized it when I was looking at this picture in an album one day!! Funny, no one told me that day.....I would have corrected it and it would have sent me off the deep end probably. Planning and having my kids birthday parties is FUN- and after not having kids for so long- then having two back to back.....it is a lot of FUN to celebrate their birthdays....I try to ALL out!!!

Here is C and his cake. I made his simpler and in the shape of a 1! I went to my local craft store and bought all the cake decor, stencils, ready made fondant, and flavoring. I used a deep pan 11x19 I think and then carved and cut and place in different ways to make the shape right. Then used lots of ICING to cover it all up before placing the fondant on top. The fondant will show each and every mistake.
I then just made the cakes from the pans I had. I did however making birthday hat for T's made it out of this bowl. Then I just carved and cut until it was just right. I used round cake pans for his face.

The cake that I make for both cakes......My friend Denise opened my eyes to this cookbook- and I have slept with it close to my side ever since!! This cookbook has taught me many many tricks and told me a lot about cakes I had no clue about!! Any time I make a cake....I pull this book out- a box of cake mix & add other things....then people will say "WOW this cake it great!!" Only my little secret that is came from a BOX!!!

Here it the recipe that I made for both cakes.

Almond Cream Cheese Pound Cake

Vegetable oil for spraying mist in pan ( I uses olive oil in a can)
flour for dusting the pan
1 package (18.5 oz)of Butter recipe Golden Cake mix
1 package (8 oz) of cream cheese at room temperature
4 large eggs
1/2 cup of water
1/2 cup of sugar
1/2 cup of oil ( I use canola)
1 tsp pure vanilla extract
1 tsp pure almond extract

Preheat oven to 350*
Spray pan lightly then dust with flour- set the pan aside.
I use any pan.....round, square tube. The recipe calls for tube- because it is a pound cake.

Place the cake mix, cream cheese, eggs, water, sugar, oil vanilla, and almond extract in a large mixing bowl. I can make hamburgers in the winter time. Yes, the pans are expensive- but I was remembering back at my latest pampered chef party last week.....MINE was FREE.....because I hosted a party!! Makes me fall in love with it all over again!!

I took FROZEN pre-made hamburger patties out and placed them on the grill pan. Flipping them every five minutes. When both sides have been flipped I added season salt. While I place a whole bag of frozen seasoned french fried in the oven on 400*. Then opened a can of Bush's Baked Beans....home style- pour them in a pot got them cooking. Toasted my tops & bottoms of Sara Lee Whole Wheat buns while everything was cooking. We were eating in 45 minutes after I started.

I also added a slice of cheese to the burgers. Cut up a red onion and tomato for the burgers. Where were the kids and hubby you ask? When my husband is not home and I am cooking....my kids will be right at my legs.....so that is when I usually pull out an educational video for them to watch. Otherwise if my husband is home....there is WWE going on in the boys bedrooms!!

*Rating...5 trips back to the kitchen*
Molliehttp://www.blogger.com/profile/17404087999714569009noreply@blogger.com1tag:blogger.com,1999:blog-2038121747274603770.post-61992098940177581992010-02-22T06:13:00.001-06:002010-02-22T06:13:00.097-06:00I heart frozen veggiesWe have recently fallen in love with frozen vegetables. The are much cheaper most of the time- you can buy a HUGE bag. Then just pull out as much as possible. I will occasionally use cans of corn, beans, tomatoes etc for recipes.....but mostly we love frozen.

I usually take the amount I need- 1 cup per person. Although the little boy in our family eats LESS than a cup....Daddy can make up for it.

I place the frozen veggies in the pot- take it to the kitchen sink and pour a small amount in the bottom of the pot- about an inch or so. I then salt & pepper. Place lid on. Place heat on HIGH and allow to boil.

Boil water and stir veggies for 2 minutes or so then turn off heat and replace the lid. They will then steam. Drain water before serving or use a slotted spoon to serve.

That is my way to do it- You can buy a veggie steamer. I do not have the room to store one....nor do I want to take the time to get it all out when a pot is in reach!!

On my green beans I throw in a few beef bouillon cubes and little dash of garlic. Then drizzle some extra virgin olive oil on top. Stir up well.

On my corn & corn on the cob.....I love to add some SUGAR.....makes it taste like it is fresh from the field!!

How do you like your veggies?? Can...frozen....fresh??? How do you fix them??Molliehttp://www.blogger.com/profile/17404087999714569009noreply@blogger.com2tag:blogger.com,1999:blog-2038121747274603770.post-9222470914022085452010-02-19T16:02:00.000-06:002010-02-20T15:09:33.435-06:00Mile High Mexican PieI bought this box of Soft Taco Bake at the store once.....and realized-I can do that with more and healthier way!!
